Spicy Mexican hot chocolate cookies blend dark chocolate, cinnamon, vanilla, and cayenne for a flavorful treat.
Ingredients:
  • 1.75 cups white sugar, divided
  • 1 cup butter, softened
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon sea salt
  • 2 large eggs
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon ground cinnamon, divided
  • 0.5 teaspoon cayenne pepper
  • 2.25 cups all-purpose flour
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat the oven to 375°F (190°C) and line 2 baking sheets with parchment paper.
  • In a large bowl, use an electric mixer to cream together 1 1/2 cups sugar, butter, vanilla, and salt until light and fluffy. Add eggs one at a time, mixing well after each addition. Mix in cream of tartar and baking soda, followed by cocoa powder, 1/2 teaspoon cinnamon, and cayenne powder. Gradually beat in flour, then stir in chocolate chips until evenly distributed throughout the dough.
  • Combine the remaining 1/4 cup of sugar with 1/2 teaspoon of cinnamon in a small bowl.
  • Using heaping tablespoons of dough, form balls and coat them evenly in a sugar-cinnamon mixture. Arrange on baking sheets, keeping a 2-inch distance between each ball.
  • Bake in the preheated oven for around 10 minutes until the centers are set and the edges are slightly cracked. Then, allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
