Spicy cookies with a dark chocolate and chili filling.
Ingredients:
  • 120g unsalted butter, chopped
  • 120g dark chocolate, chopped
  • 2 eggs
  • 4.40 gm vanilla extract
  • 250g brown sugar
  • 110g caster sugar
  • 260g plain flour
  • 50g cocoa powder
  • 5.00 gm ground cinnamon
  • 1 tsp chilli powder
  • Pinch cayenne pepper
  • 185g chocolate chips
Instructions:
  • Preheat your oven to 180°C and coat a baking tray with baking paper.
  • Melt butter and chocolate together in a heatproof bowl over simmering water, ensuring the bowl does not touch the water. Stir until smooth, then cool slightly before using.
  • Whisk eggs, vanilla, and sugars until thick and pale using electric beaters. Stir in the chocolate mixture. Sift over the flour, cocoa, and spices, then fold to combine. Finally, fold in the chocolate chips.
  • Drop tablespoon-sized portions of dough onto the tray, spacing them 4cm apart. Bake for 14 minutes, rotating the tray halfway through, until the cookies are set. Allow the cookies to cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.
