One-bowl recipe for cozy Mexican hot chocolate cookies with cocoa and marshmallows.
Ingredients:
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon ground cinnamon
  • 0.0625 teaspoon cayenne pepper
  • 2 cups confectioners' sugar
  • 3 egg whites
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon salt
  • 1 cup miniature marshmallows (such as Kraft® Jet-Puffed)
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line 2 baking sheets with parchment paper, then grease the parchment paper.
  • In a bowl, mix together cocoa powder, white sugar, cinnamon, and cayenne pepper. Add confectioners' sugar, egg whites, vanilla extract, and salt, and mix until the dough is smooth. Gently fold in the marshmallows.
  • Spoon dough onto the prepared baking sheets in rounded tablespoonfuls.
  • Bake in a preheated oven, rotating halfway through, until edges are set, for 10 to 12 minutes. Cool on baking sheets, then remove carefully, as centers are soft.
