Chef John's light and easy version of Chinese orange chicken is simply delicious.
Ingredients:
  • 1 cup orange juice
  • 0.33333334326744 cup brown sugar
  • 0.33333334326744 cup rice vinegar
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger root, grated
  • 1 teaspoon crushed red pepper flakes
  • 2 pounds skinless, boneless chicken thighs, cut into chunks
  • 1 bunch green onions, sliced, white parts and tops separated
  • 4 cloves garlic, minced
  • 2 tablespoons grated orange zest
  • 1 red bell pepper, cut into 2 inch pieces
  • 0.5 cup sugar snap peas
  • 1 fresh jalapeno pepper, sliced into rings
  • 1 bunch cilantro leaves, for garnish
Instructions:
  • Combine the zesty orange juice, rich brown sugar, tangy rice vinegar, savory fish sauce, umami soy sauce, fresh ginger, and spicy red pepper flakes in a large bowl. Beat until well mixed.
  • Coat chicken pieces thoroughly and marinate in the refrigerator for 1 hour, covered with plastic wrap.
  • Strain the chicken well in a colander, keeping the marinade aside.
  • Preheat a large nonstick skillet over high heat. Sauté chicken for 2 minutes, stirring occasionally. Remove any excess liquid. Cook and stir until chicken caramelizes, about 6 to 7 minutes.
  • Add the white parts of green onions, garlic, and orange zest to the pan, and cook while stirring for 2 to 3 minutes. Pour in half of the reserved marinade and remove the rest. Let it simmer until it thickens and reduces for about 3 to 4 minutes.
  • Add bell pepper, sugar snap peas, and jalapeño pepper to the pan and sauté until vegetables are heated through, approximately 2 minutes. Toss in the green parts of the green onions and continue to cook and stir for an additional minute.
  • Garnish with fresh cilantro and serve.
