Spicy smoked pickled okra - a zesty, flavorful garnish or snack option.
Ingredients:
  • 0.75 pound fresh okra
  • 4.5 cups cider vinegar
  • 3 cloves chopped garlic
  • 0.25 cup crushed red pepper flakes
  • 0.25 cup smoked paprika
  • 4.5 teaspoons salt
  • 1 tablespoon Szechuan peppercorns
Instructions:
  • Rinse the okra, gently rubbing to eliminate any grit and fuzz. Sterilize 2 (1 quart) canning jars and lids in boiling water for a minimum of 10 minutes, then cool before stuffing with okra.
  • In a large pot over medium-high heat, bring cider vinegar, water, garlic, red pepper flakes, smoked paprika, salt, and peppercorns to a boil. Reduce heat and simmer for 15 minutes. Remove from heat.
  • Gently fill jars with fresh, cleaned okra. Pour hot brine over okra, filling jars to the brim. Seal jars after wiping rims clean. Refrigerate for at least one week before enjoying, but two weeks for best flavor.
