Spicy polenta side dish - ready in 30 minutes for Italian cuisine lovers.
Ingredients:
  • 3 cups fat-free chicken broth with 33% less-sodium or vegetable broth
  • 1 cup fat-free (skim) milk
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1 cup uncooked corn grits or coarse-ground cornmeal
  • 1/4 cup shredded Parmesan cheese
Instructions:
  • Heat up a mixture of broth, milk, cumin, salt, and red pepper in a 3-quart saucepan until it boils. Gradually add grits to the boiling mixture while stirring vigorously with a whisk to ensure a smooth texture.
  • Lower the heat to low and let it simmer uncovered for 20 to 25 minutes until it thickens, while stirring occasionally. Then, mix in the cheese.
