Spicy pumpkin bread

Delicious homemade bread perfect for sandwiches or with char-grilled lamb salad.
Ingredients:
  • Melted butter, to grease
  • 300g (2 cups) self-raising flour
  • 1.20 gm salt
  • 1/2 tsp mild chilli powder
  • 450g (1 cup) mashed cooked pumpkin
  • 125ml (1/2 cup) milk
  • 60g butter, melted, cooled
  • 2 eggs, lightly whisked
  • 40.00 ml pepitas (pumpkin seed kernels)
Instructions:
  • Preheat oven to 180°C. Grease an 11 x 21cm loaf pan with melted butter. In a large bowl, sift flour, salt, and chili powder, then create a well in the center.
  • Combine pumpkin, milk, butter, and egg in a jug, whisk until well mixed. Fold the pumpkin mixture into the flour mixture using a large metal spoon until just combined. Transfer the batter to the prepared pan, level the top, and sprinkle evenly with pepitas.
  • Bake in a preheated oven for 35-40 minutes until a skewer inserted into the center comes out clean. Remove from the oven and let it sit in the pan for 5 minutes before transferring to a wire rack to cool.
