Ingredients:
  • 1.2kg pumpkin, peeled and chopped
  • 36.40 gm olive oil
  • 2 cloves garlic, crushed
  • 3.75 gm ground cumin
  • 1/4 tsp dried chilli
  • 60ml olive oil
  • 42.00 gm lemon juice
  • 62.50 ml coriander, chopped
Instructions:
  • Preheat your oven to 200 degrees Celsius.
  • Mix pumpkin pieces with a drizzle of olive oil until coated. Roast in the oven until the pumpkin is caramelized to perfection.
  • While the pumpkin is still hot, mash it and then mix in all the remaining ingredients. Serve the dish warm or cool with pita chips.
