Butternut squash and pear puree with fall spices, chipotle, and Swanson® Chicken Broth for a comforting and flavorful dish.
Ingredients:
  • 1 (3 pound) butternut squash - peeled, seeded, and cubed
  • 1 pinch salt and ground black pepper to taste
  • 1 tablespoon olive oil
  • 8 strips maple-flavored bacon, chopped
  • 1 large white onion, chopped
  • 2 red pears - peeled, seeded, and chopped
  • 2 cloves fresh garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground dried chipotle pepper
  • 3 cups Swanson® Chicken Broth
  • 1 teaspoon sour cream for garnish
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and cover a large baking sheet with aluminum foil.
  • Transfer the squash to a spacious bowl and generously drizzle with aromatic olive oil, ensuring each piece is perfectly coated. Arrange the squash in a uniform layer on a lined baking sheet. Sprinkle with a pinch of salt and a dash of pepper for a burst of flavor.
  • Roast squash in a preheated oven until softened, turning once, for a total of 30-40 minutes.
  • Cook the chopped bacon in a heavy pot over medium-high heat, stirring occasionally, until brown and crisp, about 8 minutes. Remove the bacon with a slotted spoon and transfer to a paper towel-lined plate to drain, reserving the bacon drippings.
  • Heat the pot over medium heat, and sauté the onion, pears, garlic, rosemary, and thyme in the bacon drippings until the onions and pears are soft (about 3 to 5 minutes). Stir in the roasted squash and cook for an additional 5 minutes. Pour in Swanson® Chicken Broth, nutmeg, cinnamon, and chipotle pepper. Let simmer over medium-low heat until all ingredients are very soft and flavors meld together, which should take about 10 minutes.
  • Blend the soup in a food processor or blender in small portions.
  • Pour the soup into bowls and top with crispy bacon bits and a heaping spoonful of sour cream. Bon appétit!
