Spicy shrimp in sambal oelek butter sauce over steamed sushi rice. Delicious Indonesian-inspired dish.
Ingredients:
  • 1 pound large frozen shrimp, tails removed
  • 0.5 cup butter
  • 3 cloves garlic, minced, or more to taste
  • 0.5 lemon, juiced, divided
  • 1.5 teaspoons butter
  • 0.75 cup chopped onion
  • 0.5 cup sambal oelek (Indonesian red chile paste)
  • 3 cups water
  • 3 cups sushi rice
  • 0.5 bunch green onions, chopped
Instructions:
  • Thaw shrimp in a large bowl of cold water for 10 to 15 minutes.
  • In a microwave-safe glass or ceramic bowl, melt 1/2 cup butter in 15-second intervals for 30 seconds to 1 minute. Stir in garlic and half of the lemon juice.
  • In a large skillet over medium heat, melt 1 1/2 teaspoon of butter. Cook and stir onions until translucent, about 5 minutes. Add shrimp, garlic butter mixture, and sambal oelek. Stir and cook until garlic is cooked and shrimp are heated through, about 7 to 8 minutes.
  • In a saucepan, bring water and sushi rice to a gentle boil. Lower heat, cover, and let it simmer until rice is tender, around 15 minutes. Remove from heat, cover, and let it rest until liquid is absorbed, about 10 minutes.
  • Plate the shrimp on a bed of fluffy rice, drizzle with the rest of the zesty lemon juice, and sprinkle with fresh, vibrant green onions for a dazzling finish.
