Spicy sambal noodles with omelette

Spicy low carb noodles - quick, flavorful, and guilt-free!
Ingredients:
  • 60ml (1/4 cup) Sweet Soy Sauce, plus extra, to serve
  • 40.00 ml sambal oelek
  • 30.50 gm fish sauce
  • 20.00 gm water
  • 16.80 gm coconut oil
  • 400g fresh wholemeal hokkien noodles
  • 1 large brown onion, halved, thinly sliced
  • 150g sugar snap peas, trimmed
  • 150g green beans, trimmed, sliced diagonally
  • 4 garlic cloves, crushed
  • Fried shallots, to serve
  • Sambal oelek, extra, to serve (optional)
Instructions:
  • In a small bowl, mix together the sweet soy sauce, 1 1/2 tablespoons of sambal oelek, 4 teaspoons of fish sauce, and water. In a separate jug, whisk together the eggs with the remaining sambal oelek and fish sauce.
  • In a non-stick wok, heat 1 teaspoon of oil over high heat. Pour in half of the egg mixture, swivel the wok to spread it evenly. Cook for 1 minute until barely set. Transfer to a board. Repeat with 1 teaspoon of oil and the remaining egg mixture. Roll up each omelette and slice thinly. Set aside.
  • Place the noodles in a heatproof bowl and cover them with boiling water. Allow them to stand for 4 minutes. Then, drain the noodles and rinse them under cold running water.
  • Use a paper towel to clean the wok. Heat the rest of the oil over high heat. Stir in the onion and cook for 1 minute. Mix in peas, beans, and garlic, stir-frying for 2 minutes until they are tender-crisp. Add noodles and sweet soy sauce mixture, then stir-fry for 1 minute until everything is coated and warmed through.
  • Serve the noodles on individual plates, layer with sliced omelette, sprinkle with shallots, and enjoy with lime wedges and additional sambal oelek and sweet soy sauce, if desired.
