Spicy pork and peanut noodles

Spicy peanut pork noodles: Ready in 20 minutes.
Ingredients:
  • 500g packet fresh egg noodles
  • 152.50 gm Panda Brand Oyster Sauce
  • 85.80 gm smooth or crunchy peanut butter
  • 40.00 ml black vinegar
  • 28.60 gm honey
  • 30.00 ml sesame oil
  • 750g pork mince
  • 4 garlic cloves, crushed
  • 2cm piece fresh ginger, finely grated
  • 20.00 ml Sichuan peppercorns, finely crushed
  • 20.00 ml sambal oelek
  • 165.00 ml chopped roasted salted peanuts
  • 2 long red chillies, thinly sliced
  • 3 green onions, thinly sliced
  • 2 bunches choy sum, steamed, to serve
Instructions:
  • Prepare noodles according to the package instructions, then drain and rinse under hot water before transferring them to a large bowl.
  • In a large jug, combine oyster sauce, peanut butter, vinegar, honey, and 1 cup of water. Whisk until smooth and well blended.
  • Preheat a wok over high heat, then add oil and swirl to coat. Stir-fry the mince, breaking up lumps with a wooden spoon, for 4 to 6 minutes until browned. Add garlic, ginger, peppercorn, and sambal oelek, and stir-fry for 1 minute.
  • Pour in the fragrant and flavorful peanut mixture. Sauté for 2 to 3 minutes until everything is heated to perfection. Introduce half of the savory mince mixture to the noodles and mix thoroughly. Finish by adding the remaining mince mixture on top. Garnish with peanuts, chili, and onion for a burst of flavors. Pair your creation with some fresh choy sum and enjoy the dish.
