Slow-cooker melting pork ramen recipe

Create rich, flavorful ramen at home effortlessly with a slow cooker, featuring tender pork belly and luscious soft-boiled eggs.
Ingredients:
  • 18.20 gm peanut oil
  • 1kg Pork Belly Roast Boneless
  • 1 garlic bulb, halved horizontally
  • 1.25L (5 cups) Chicken Style Liquid Stock
  • 5cm-piece fresh ginger, thickly sliced
  • 1 green shallot, halved, plus extra, sliced diagonally, to serve
  • 40.00 ml mirin
  • 42.00 gm light soy sauce
  • 1 tsp sambal oelek
  • 200g dried ramen noodles
  • 750.00 ml baby spinach
  • 4 eggs, soft boiled, halved crossways
  • Sliced fresh red chilli, to serve (optional)
Instructions:
  • In a spacious frying pan, heat the oil. Place the pork in the pan with the rind down and cook until golden for around 10 minutes. Flip the pork and continue to cook for an additional 5 minutes. Add the garlic, cut-side down, in the last 2 minutes. Move the pork and garlic to a slow cooker. Pour in the stock, ginger, and shallot. Cover and cook on High for 5-6 hours until the pork is tender.
  • Transfer the pork to a plate using tongs and allow it to cool slightly. Remove and discard the rind and fat, then shred the pork coarsely with forks before transferring it to a baking tray.
  • Mix the mirin, soy sauce, and sambal oelek in the slow cooker. Add more soy sauce, mirin, and sambal oelek to taste.
  • Boil the noodles in a large saucepan of water until tender, approximately 5 minutes. Drain the noodles and distribute evenly into serving bowls.
  • Preheat the grill to high and quickly grill the pork for 3 minutes until beautifully browned.
  • Distribute the pork and spinach evenly into the bowls, then pour in the broth. Top with egg halves and extra shallot and chili, if desired, and serve.
