Ingredients:
  • 36.40 gm olive oil
  • 6 beef sausages
  • 1 red capsicum, diced
  • 1/2 tsp chilli powder
  • 2 x 400g cans diced tomatoes
  • 420g can red kidney beans, rinsed, drained
  • 4 x 26cm tortillas
  • 82.50 ml fresh coriander leaves, to serve
  • sour cream, to serve
Instructions:
  • Preheat oven to 180°C. Heat 2 teaspoons of oil in a frying pan over medium heat. Brown and cook sausages for 5 to 6 minutes until just cooked. Remove, slice, and set aside.
  • Drizzle 2 teaspoons of oil into a hot frying pan, then sauté capsicum for 1 minute. Follow by stirring in garlic and chilli, cooking for an additional 1 minute.
  • Combine the tomatoes, beans, and sausages in a frying pan. Stir and bring to a boil. Reduce heat and simmer on low for 6 to 8 minutes until slightly thickened. Season to taste.
  • Brush the tortillas with the remaining oil, then cut each into 8 wedges. Arrange them on 2 baking trays and bake for 10 minutes, swapping the position of the trays halfway through, or until they turn golden brown.
  • Divide the savory sausage mixture into bowls, sprinkle with fresh coriander, and enjoy with crispy tortilla wedges and a dollop of tangy sour cream.
