Quick and delicious pad thai with juicy shrimp, tangy-sweet-spicy flavors in less than an hour.
Ingredients:
  • 1 (8 ounce) package dried rice noodles
  • 2 teaspoons peanut oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons rice wine vinegar
  • 3 tablespoons ketchup
  • 3 tablespoons fish sauce
  • 3 tablespoons sweet chile sauce
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon light soy sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon red pepper flakes
  • 12 uncooked medium shrimp, peeled and deveined
  • 2 eggs, lightly beaten
  • 1 cup unsalted dry-roasted peanuts, chopped
  • 0.5 pound bean sprouts
  • 0.25 cup shredded carrots
  • 0.5 lime, cut into wedges
  • 0.25 cup chopped green onions
  • 0.25 cup coarsely chopped cilantro
Instructions:
  • In a large bowl, soak the noodles in hot water until softened, approximately 15 minutes. Drain and rinse the noodles thoroughly.
  • In a wok over medium heat, sauté onion and garlic in oil until onion is translucent, around 5 minutes.
  • In a bowl, whisk together rice wine vinegar, ketchup, fish sauce, chile sauce, peanut butter, soy sauce, lime juice, sugar, red pepper flakes, and cayenne pepper. Let it sit for flavors to meld.
  • Add the shrimp to the wok and cook until they turn pink, approximately 4 minutes. Mix in the ketchup and move everything to one side of the pan to create space. Crack in the eggs and let them cook undisturbed until partially set, around 3 minutes.
  • Combine the drained noodles with the shrimp and egg mixture, then toss in 1/2 cup peanuts, 1/4 cup bean sprouts, and carrots. Stir well over heat for about 2 minutes until noodles are hot. Finish with a final topping of peanuts, bean sprouts, lime wedges, green onions, and cilantro.
