Spicy Sichuan pork and green bean noodles with a secret three-ingredient sauce. Blistered green beans and caramelized noodles create restaurant-style flavor in minutes.
Ingredients:
  • 1½ tablespoons oyster sauce
  • 1½ tablespoons kecap manis
  • 4 teaspoons sambal oelek
  • 250 g fresh Shanghai or hokkien noodles
  • 2 tablespoons vegetable oil
  • 2 cups (200g) green beans ends trimmed and cut in half
  • ½ brown onion finely diced
  • 1 clove of garlic finely minced
  • 2 teaspoons ginger finely minced (optional)
  • 200 g pork mince
Instructions:
  • Mix the ingredients for the Spicy Asian sauce in a small bowl. Cook the noodles following the packet directions. Drain and briefly rinse under cold water. Keep in colander until needed. In a large cast-iron pan, heat 1 tablespoon of oil until almost smoking. Add green beans in a single layer, cook for 2 minutes without stirring too often until lightly charred and cooked. Transfer beans to a bowl. In the same pan, heat remaining oil and sauté onion, garlic, and ginger for 30 seconds. Add pork mince, cook for about 1 minute until it turns white. Stir in 1 tablespoon of sauce and cook for another minute until browned. Combine noodles, green beans, and the rest of the sauce. Toss for 2 minutes until noodles caramelize. Divide the dish into two bowls and enjoy immediately!
