Spicy herb and spice filled turkey and brown rice stuffed bell peppers for an exciting meal.
Ingredients:
  • 0.75 cup uncooked brown rice
  • 1.5 cups water
  • 1 pound ground turkey
  • 3 (8 ounce) cans tomato sauce
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon red pepper flakes
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon dried basil
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried parsley
  • 4 medium green bell peppers
Instructions:
  • Preheat the oven to 375°F (190°C).
  • After rinsing the rice, transfer it to a saucepan. Pour in water and bring to a boil. Lower the heat to medium-low, cover, and let it simmer for approximately 20 minutes until the rice is partially cooked. Finally, remove from heat.
  • Heat up a large skillet over medium-high heat. Sauté and stir turkey in the skillet until partially cooked and crumbly, about 3 to 4 minutes. Remove and dispose of any excess grease.
  • Combine cooked rice with a blend of tomato sauce, egg, Worcestershire sauce, red pepper flakes, onion powder, garlic powder, salt, pepper, and a medley of basil, oregano, and parsley; mix until fully incorporated.
  • Prepare the peppers by cutting off the tops and scooping out the insides. Place them upright in a baking dish. Fill each pepper with the turkey mixture and any extra around the peppers. Cover with foil before baking.
  • Cook in the oven until the turkey and rice are fully cooked and the filling is heated through, approximately 50 minutes.
