Elevate stuffed bell peppers with spicy sausage, bacon, and creamy Neufchatel cheese. Top with Alfredo sauce for a decadent twist.
Ingredients:
  • 2 teaspoons olive oil
  • 1 yellow onion, chopped
  • 1 (12 ounce) package fresh mushrooms, chopped
  • 2 cloves garlic, minced
  • salt to taste
  • 1 pound bulk spicy pork sausage
  • 0.5 (14 ounce) package cooked bacon, diced
  • 1.5 (8 ounce) packages Neufchatel cheese
  • 1 cup sour cream
  • 2 teaspoons garlic and herb seasoning, or more to taste
  • 3 large green bell peppers, tops and seeds removed
  • 1 (16 ounce) jar Alfredo sauce
  • 0.5 cup shredded Cheddar cheese, or more to taste
Instructions:
  • Preheat the oven to 400°F (200°C) and generously grease a 9x13 baking dish.
  • In a large skillet over medium heat, sauté onions, mushrooms, garlic, and salt in olive oil until onions are soft and translucent, about 7 to 10 minutes.
  • In a hot skillet, sizzle sausage until golden, about 10 minutes, breaking into pieces. Mix in bacon, Neufchatel cheese, and sour cream. Blend in mushroom mixture, saving a bit for later. Season with garlic and herb blend, salt, and black pepper.
  • Heat up the Alfredo sauce along with the reserved mushroom mixture in a pan over gentle heat for 3 to 5 minutes.
  • Fill bell peppers with the savory sausage-mushroom blend, then arrange in the baking dish. Sprinkle each pepper with gooey Cheddar cheese and generously drizzle with heated Alfredo sauce. Cover dish with foil before baking.
  • Bake in the preheated oven until bell peppers start to soften, about 30 minutes. Uncover and bake until cheese is melted, another 10 to 20 minutes.
