Spicy Szechuan beef and broccoli stir-fry

Spicy Szechuan mince stir-fry - quick and delicious!
Ingredients:
  • 200g pkt dried rice stick noodles
  • 18.20 gm Brand Pure Olive Oil
  • 500g 4 Star Beef Mince
  • 1 red capsicum, thinly sliced
  • 1 carrot, cut into matchsticks
  • 2 small fresh red chillies, thinly sliced
  • 500g pkt frozen Broccoli Florets
  • 2 x 140g pkts Spicy Szechuan Stir-Fry Sauce
  • 62.50 ml mint leaves
Instructions:
  • Prepare the noodles according to the package instructions until al dente. Rinse with cold water to cool them down, then drain well.
  • Heat oil in a wok over high heat. Stir-fry the mince until browned, about 5 mins. Add capsicum, carrot, and half of the chili, stir-frying for another 5 mins until just tender.
  • Combine the broccoli and noodles in the wok and stir-fry for 4 minutes. Pour in the sauce and continue to stir-fry for 1 minute or until the broccoli is heated through. Serve the stir-fry in bowls and garnish with mint and the remaining chili.
