Spicy Szechuan beef and broccoli stir-fry

Whip up a zesty Szechuan beef & broccoli stir-fry for a fast and flavorful meal.
Ingredients:
  • 200g packet dried rice stick noodles
  • 18.20 gm pure olive oil
  • 500g beef mince
  • 1 red capsicum, thinly sliced
  • 1 carrot, cut into matchsticks
  • 2 small fresh red chillies, thinly sliced
  • 500g packet frozen broccoli florets
  • 2 x 140g packets spicy Szechuan stir-fry sauce
  • 62.50 ml mint leaves
Instructions:
  • Prepare the noodles according to the package instructions until just tender. Rinse under cold water and drain well.
  • Heat oil in a wok over high heat. Stir-fry mince until browned, about 5 minutes. Add capsicum, carrot, and half of the chilli, stir-frying for an additional 5 minutes until just tender.
  • Toss broccoli and noodles into the wok, stir-fry for 4 minutes. Drizzle in the sauce and stir-fry for another minute until broccoli is warm. Serve the stir-fry in bowls, garnish with mint and the rest of the chili.
