Brined, roasted jumbo shrimp mixed with vibrant bell peppers and cilantro in a zesty lemon soy-sesame dressing.
Ingredients:
  • 2 quarts water
  • 0.5 cup kosher salt
  • 0.5 cup sugar
  • 0.25 cup Kikkoman Soy Sauce
  • 2 pounds jumbo shrimp, peeled and deveined
  • 2 tablespoons lemon juice
  • 1 tablespoon Kikkoman Soy Sauce
  • 1 tablespoon sesame oil
  • 0.5 teaspoon cayenne pepper
  • 1 tablespoon garlic, minced
  • 1 cup sliced peppers (red, yellow or orange)
  • 2 tablespoons cilantro, chopped
Instructions:
  • In a large bowl, mix together water, salt, sugar, and Kikkoman Soy Sauce until the sugar and salt are dissolved. Add 2 pounds of peeled and deveined shrimp, ensuring they are fully submerged. Allow the shrimp to brine for 1 hour.
  • Preheat oven to 400°F (200°C) for a perfect bake.
  • Prepare shrimp by gently washing them. Arrange the shrimp on a baking sheet with raised edges in a single layer. Cook the shrimp in the oven until fully cooked, about 6 to 8 minutes.
  • Combine zesty lemon juice, savory soy sauce, aromatic sesame oil, spicy cayenne pepper, and pungent garlic in a spacious bowl. Gently mix in vibrant peppers, fragrant cilantro, and succulent shrimp; ensuring everything is evenly coated. Enjoy the explosion of flavors!
