Experience the tantalizing taste of Thailand with a quick and healthy Tom Yum Shrimp Soup!
Ingredients:
  • For the soup:
  • 1/2 pound shrimp, peeled and deveined
  • 2 stalks lemongrass (see Recipe Note)
  • 6 cups water or shrimp stock
  • 4 cloves garlic, minced
  • 2 Thai (bird's eye) chiles, sliced, or more to taste
  • 1 lime, zested and juiced
  • 1 cup sliced button mushrooms
  • 1 teaspoon grated ginger
  • 1 teaspoon sugar
  • 2 teaspoons soy or fish sauce, plus more to taste
  • To serve:
  • Cilantro leaves
  • Lime wedges
Instructions:
  • For the shrimp: If needed, peel and devein the shrimp. Save the shells for making a flavorful shrimp stock. Trim the lemongrass by cutting off 1 inch from the bottom and about 5 inches from the top. Remove the tough outer layers, smash gently with a knife, and tie each stalk into a knot to reveal the layers. The lemongrass should be around 12 inches long after trimming.
  • Prepare the soup: In a medium pot, bring 6 cups of water or shrimp stock to a boil with lemongrass. Once boiling, lower the heat to a simmer, then toss in the garlic, chiles, lime zest, mushrooms, ginger, sugar, and soy sauce (or fish sauce). Let it simmer for 3 minutes.
  • Cook the shrimp: Add them to the pot and cook until they turn pink and opaque, approximately 3 minutes. Then, stir in the lime juice. Taste the soup and adjust the seasoning with more chiles, lime juice, and/or soy sauce to your preferred level of spice, acidity, and saltiness.
  • Garnish and serve the soup: Ladle the soup into bowls and garnish with cilantro leaves, additional sliced chiles, and lime wedges.
