Spicy tomato soup with nutritious veggies - a cozy, healthy winter favorite!
Ingredients:
  • 9.20 gm olive oil
  • 1 red onion, finely chopped
  • 20.00 ml harissa (see note)
  • 1 medium carrot, peeled, finely chopped
  • 1 red capsicum, finely chopped
  • 200g cauliflower, cut into small florets
  • 800g can diced tomatoes
  • 100g green beans, trimmed, chopped
  • 40.00 ml couscous
Instructions:
  • In a large saucepan over medium-high heat, sizzle onions in hot oil until soft, about 5 to 7 minutes. Stir in harissa and cook for an additional minute until aromatic.
  • Combine carrot, capsicum, cauliflower, tomatoes, and 1 1/2 cups of cold water in a pot. Cover and bring to a boil. Reduce to medium heat and simmer uncovered for 10 to 15 minutes until vegetables are tender and the soup has slightly reduced.
  • Mix beans and couscous together in the pot. Cook for 3 to 5 minutes, until beans are tender. Serve hot.
