Elevate your comfort meal with decadent grilled Brie cheese sandwiches and flavorful spiced tomato bisque with fresh basil. Dip and enjoy the delicious duo.
Ingredients:
  • 4 ounces Brie cheese
  • 4 slices rye bread
  • 1 (28 ounce) can tomato puree
  • 0.5 teaspoon red pepper flakes
  • 0.125 teaspoon freshly ground black pepper
  • 0.75 teaspoon dried basil
  • 0.5 teaspoon white sugar
  • 0.25 cup milk
  • 4 ounces cream cheese, cubed
  • 2 tablespoons chopped fresh basil leaves
Instructions:
  • Preheat your oven or toaster oven to 400 degrees F (200 degrees C). Sandwich the creamy Brie cheese between two slices of bread. Bake on a tray for 8 minutes, flipping halfway through. Slice in half and set aside.
  • Combine tomato puree, red pepper flakes, black pepper, basil, and sugar in a saucepan over medium heat. Simmer for 10 minutes.
  • Blend the cream cheese until smooth, then mix in the milk. Warm the mixture without boiling. Add the fresh basil, then take off the heat.
  • To serve, place each sandwich half in its own bowl and generously ladle hot soup over them. Enjoy immediately.
