Spicy tomato sauce baked squid stuffed with flavorful rice - irresistible.
Ingredients:
  • 1 cup water
  • 0.5 cup uncooked white rice
  • 3 squid
  • 0.25 cup raisins
  • 0.25 cup pine nuts
  • 1 onion, chopped
  • 3 cloves crushed garlic
  • 2 (14.5 ounce) cans stewed tomatoes
  • 4 cloves crushed garlic
  • 2 teaspoons crushed red pepper flakes
  • 2 teaspoons dried oregano
  • 3 teaspoons anchovy paste
  • 0.5 cup white wine
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 7x11-inch baking dish.
  • In a saucepan, bring 1 cup of water to a boil. Add rice and simmer covered until liquid is absorbed, around 20 minutes.
  • Separate the head and tentacles from the squid body; finely chop the tentacles. Remove the quill and peel off the colored skin from the body. Rinse the body under cold water and keep it aside.
  • Mix together the rice, raisins, and pine nuts in a small bowl.
  • Sauté one onion and three cloves of garlic in two tablespoons of olive oil until tender in a medium skillet. Add squid tentacles and rice mixture, stirring to combine. Remove from heat and season with salt and pepper to taste.
  • Cook the chopped onion and garlic in olive oil until softened in a large skillet. Mix in red pepper flakes and oregano. Combine with tomatoes, anchovy paste, and wine. Simmer until slightly thickened on medium heat. Season with salt and pepper.
  • Fill the squid with the flavorful rice mixture and secure the ends with wooden picks. Arrange the stuffed squid in the baking dish and generously pour over the delicious tomato sauce.
  • Cook in the oven already warmed up for an hour.
