Spicy stuffed mushrooms

Spicy vegetarian Valentine's Day starter.
Ingredients:
  • 400g mushroom
  • olive oil cooking spray
  • 150.00 gm cooked white rice
  • 2.50 gm mild curry powder
  • 1/2 tsp ground turmeric
  • 4 green onions, finely chopped
  • 40.00 ml flat-leaf parsley leaves
  • 2 large tomatoes, finely chopped
  • 20g baby rocket, to serve
Instructions:
  • Preheat your oven to a toasty 200°C. Arrange mushrooms, stem-side up, in a snug single layer in a roasting pan.
  • Preheat a non-stick frying pan over medium heat and spray with oil. Add rice, curry powder, turmeric, onion, and garlic. Stir and cook for 3 minutes until heated through.
  • Finely chop half of the fresh parsley. Combine it with the tomato in the frying pan. Cook over medium heat and stir constantly for 3 minutes.
  • Fill mushrooms generously with the rice mixture. Drizzle tops with oil. Roast for 25 minutes, or until mushrooms are soft and tender.
  • Transfer the mushrooms to a serving plate. Sprinkle with the remaining parsley leaves. Serve alongside a bed of fresh rocket.
