Savory quiche with ripe tomatoes and flaky, made-from-scratch crust.
Ingredients:
  • 260g plain flour
  • 125g chilled butter, chopped
  • 2 Free Range Egg yolks
  • 250g pkt vine-ripened cherry tomatoes
  • 9.20 gm olive oil
  • 4 rashers streaky bacon, finely chopped
  • 4 Free Range Eggs, lightly whisked
  • 125ml thickened cream
  • 60g pkt Baby Spinach, coarsely chopped
  • 100g ricotta
Instructions:
  • In a food processor, combine flour and butter until mixture resembles fine breadcrumbs. Add egg yolks and 1½ tbs cold water, and process until dough just comes together. Transfer to a lightly floured surface and gently knead until smooth, then shape into a disc. Cover with plastic wrap and chill in the fridge for 15 minutes.
  • Preheat the oven to 200°C. Line a baking tray with baking paper, then arrange the tomatoes on it. Drizzle with half of the oil, season with salt and pepper, and bake for 10 minutes until the tomatoes start to collapse. Allow to cool before using.
  • Heat the remaining oil in a frying pan over medium heat. Sauté onion and bacon together, stirring occasionally, for 5 minutes or until onion is soft and bacon is cooked.
  • Roll out the pastry into a 15cm x 40cm rectangle on a lightly floured surface. Line a 10cm x 34cm fluted tart tin with removable base with the pastry, trimming any excess. Chill the pastry case in the fridge for 15 minutes.
  • Gently transfer the pastry case to a baking tray, line it with baking paper, and fill it with pastry weights or rice. Bake for 10 minutes.
  • Take out the parchment paper and the weights or rice. Bake for 8-10 minutes or until it turns a light golden color. Then, lower the oven temperature to 160°C.
  • In a bowl, combine the whisked egg and cream, season to taste. Spread the onion mixture, spinach, and ricotta in the pastry case. Gently pour the egg mixture over the filling. Bake for 30 minutes until the filling is just set. Garnish with roasted tomatoes. Enjoy warm or at room temperature.
