Spinach, garlic & feta dip

Creamy spinach and feta dip made with baby spinach, feta cheese, and sour cream.
Ingredients:
  • 1 clove garlic
  • 150g baby spinach leaves
  • 200g Australian feta, crumbled
  • 235.00 gm light sour cream
  • 6.10 gm Worcestershire sauce
  • 4.60 gm olive oil, for drizzling (optional)
  • Focaccia, (see related recipe) to serve
Instructions:
  • Boil a large saucepan of water, then gently simmer garlic for 1 min. Add spinach and blanch for 1 min until wilted. Drain, rinse under cold water, and finely chop the garlic. Drain spinach again, squeeze out water, and roughly chop.
  • Combine the spinach, garlic, and remaining ingredients in a bowl, ensuring they are well mixed. Optionally, drizzle with oil. Serve alongside focaccia.
