Creamy, cheesy spinach and artichoke casserole with water chestnuts and a breadcrumb topping.
Ingredients:
  • 2 (10 ounce) packages frozen chopped spinach
  • 0.5 cup water
  • 0.5 cup butter
  • 1 (8 ounce) package cream cheese
  • 1 (8 ounce) can sliced water chestnuts, drained
  • garlic powder, or to taste
  • 1 (14 ounce) can artichoke hearts, drained and halved
  • 0.5 cup bread crumbs
  • 2 tablespoons butter, cut into small pieces
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Place fresh spinach in a microwave-safe bowl and gently drizzle water over it. Seal the bowl tightly with plastic wrap.
  • Microwave on High, stirring occasionally, for 9 to 11 minutes until the spinach is heated through. Drain in a colander, pressing to remove excess moisture.
  • In a saucepan over medium heat, melt 1/2 cup of butter. Add spinach, cream cheese, water chestnuts, and garlic powder. Stir and cook until the cheese is melted, about 5 to 7 minutes.
  • Arrange artichoke hearts in the baking dish, followed by spreading the spinach mixture on top. Sprinkle bread crumbs over the spinach and dot the casserole with butter pieces for a delicious finish.
  • Bake in a hot oven until warmed through, for about 20 to 25 minutes.
