Ingredients:
  • Olive oil, for greasing
  • 750g lean beef mince
  • 1 medium brown onion, finely chopped
  • 50g (1 cup) fresh breadcrumbs
  • 60mls (1/ cup) milk
  • 1 egg, whisked
  • 20.00 ml chopped fresh continental parsley
  • Salt & ground black pepper, to taste
  • 1 bunch English spinach, washed, stalks removed, chopped
  • 10.00 gm butter
  • Pinch ground nutmeg
  • 60mls (1/4 cup) purchased tomato sauce
  • 8.00 gm brown sugar
  • 2 tsp white vinegar
  • 2.95 gm dry mustard
Instructions:
  • Preheat your oven to 180°C and generously brush a baking dish with oil to coat it.
  • Prepare the filling by gently cooking the spinach in a covered medium saucepan with residual water from washing for 4-5 minutes until wilted. Drain thoroughly and then mix in butter, nutmeg, and pepper for a flavorful combination. Set aside for later use.
  • Combine the beef mince, onion, breadcrumbs, milk, egg, and parsley in a large bowl. Season generously with salt and pepper, then mix thoroughly.
  • Lay a generous 50cm-long piece of foil on a flat surface and lightly moisten it to prevent sticking. Shape the meat mixture into an 18x30cm rectangle that is 1.5cm thick on the foil.
  • Evenly layer the flavorful spinach mixture on the meat, roll it up starting from the shortest end, gently tuck in the ends, then transfer to a greased baking dish. Bake in the preheated oven for 40 minutes.
  • In a small bowl, mix together the tomato sauce, sugar, vinegar, and mustard to create the glaze.
  • Drizzle the glaze over the roll, then bake for another 10 minutes, basting the roll with the glaze twice while cooking, until the juices run clear when a skewer is inserted in the center.
