Wholesome roast beef baguette, ideal for a quick and nutritious lunch option.
Ingredients:
  • 150g sliced rare roast beef, cut into thin strips
  • 75g (1/4 cup) low-fat mayonnaise
  • 2-3 tsp horseradish cream
  • 40.00 ml chopped fresh chives
  • Salt & freshly ground black pepper
  • 1 30cm baguette (French stick)
  • 30g baby spinach leaves, washed, dried
Instructions:
  • Combine beef, mayonnaise, horseradish cream, chives, salt, and pepper in a medium bowl, mixing until well combined.
  • Slice the baguette lengthwise, leaving one side intact. Fill the baguette with spinach leaves and beef mixture. Cut the baguette into three pieces using a large serrated knife before serving.
