Curry-infused tomato broth with cauliflower and spinach, served with roti bread. Flavorful and satisfying meal.
Ingredients:
  • 0.25 cup vegetable oil
  • 2 large onions, coarsely chopped
  • 1 head cauliflower, cut into florets
  • 2 cloves garlic, crushed
  • 1 (1 inch) piece fresh ginger, peeled and chopped
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1.25 teaspoons cayenne pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1.25 cups vegetable broth
  • salt and ground black pepper to taste
  • 1 pound fresh spinach, chopped and stems removed
Instructions:
  • In a large saucepan over medium heat, sizzle onions and cauliflower in vegetable oil until just softened, for about 3 minutes. Mix in garlic, ginger, coriander, cumin, turmeric, and cayenne pepper, ensuring everything is coated well.
  • Combine tomatoes and vegetable broth with the cauliflower mixture; season generously with salt and black pepper. Bring to a boil, then cover and lower the heat to simmer for about 8 minutes to allow the flavors to meld. Gently fold in the spinach until just starting to wilt, cover again and simmer for an additional 8 to 10 minutes until the spinach is fully wilted and the cauliflower is tender.
