Spinach & feta filo pie

Indulge in a savory, cheesy pie perfect for weekend lunches. Pair with salad, flatbread, or seasoned yogurt. Customize with your favorite leafy greens.
Ingredients:
  • 100 g pine nuts
  • 5 large free-range eggs
  • 300 g feta cheese
  • 50 g Cheddar cheese
  • dried oregano
  • 1 lemon
  • 1 knob of unsalted butter
  • 400 g baby spinach
  • 1 x 270 g pack of filo pastry
  • cayenne pepper
  • 1 whole nutmeg for grating
Instructions:
  • Preheat the oven to 200°C/400°F/gas 6. Toast the pine nuts in a large ovenproof frying pan over medium heat for 1-2 minutes until golden and fragrant. Crack the eggs into a large mixing bowl, add crumbled feta, grated Cheddar, black pepper, dried oregano, lemon zest, a drizzle of oil, and toasted pine nuts, mix well. Melt butter in the pan with a bit of oil, wilt spinach in batches, then spread out on greased paper. Layer and brush filo sheets with oil, salt, pepper, and cayenne. Mix wilted spinach into egg mixture with grated nutmeg, pour into filo-lined pan, fold over excess filo. Cook on stovetop briefly then bake for 18-20 minutes until golden. Serve with a fresh seasonal salad.
