Spinach, feta & lemon filo pie

Delicious feta and spinach pie with flaky filo crust, baked to perfection. Perfect with a side salad.
Ingredients:
  • 1 kg frozen spinach
  • 2 onions
  • 1 whole nutmeg for grating
  • 1 lemon
  • 100 g feta cheese
  • ½ a bunch of fresh flat-leaf parsley (15g)
  • ½ a bunch of fresh dill (15g)
  • 200 g natural yoghurt
  • 4 large free-range eggs
  • 1 x 275 g pack filo pastry
  • 10 g Cheddar cheese
Instructions:
  • - Preheat the oven to 180°C/350°F/gas 4. - Defrost and squeeze out excess water from 1kg of frozen spinach. - Peel and finely slice 2 onions and 2 cloves of garlic. Sauté in a large non-stick pan with 1 tbsp of olive oil until softened. - Stir in the spinach, grate nutmeg, add lemon zest, crumble in 50g of feta, season with salt and pepper, and mix in half of chopped parsley and dill. - In a bowl, combine remaining 50g feta, 200g yoghurt, and 4 eggs. - Lay out and fill filo pastry sheets with spinach mix, rolling into sausage shapes and placing in a 30cm x 40cm baking dish. - Pour over the egg mixture, olive oil, and grate 10g of Cheddar. - Bake for 35 minutes until golden. Top with remaining herbs before serving.
