Creamy red potato frittata with spinach, garlic, green onions, and cheese - a delicious brunch or breakfast!
Ingredients:
  • 6 small red potatoes, sliced
  • 1 cup torn fresh spinach
  • 2 tablespoons sliced green onions
  • 1 teaspoon crushed garlic
  • salt and pepper to taste
  • 6 large eggs
  • 0.33333334326744 cup milk
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • Collect all your ingredients in one place.
  • In a medium skillet over medium heat, sauté the potatoes in the flavorful olive oil until tender yet slightly firm, approximately 10 minutes. Stir occasionally for even cooking.
  • Combine the spinach, green onions, and garlic in the pan. Season with salt and pepper. Saute until the spinach wilts, for about 1 to 2 minutes.
  • In a medium bowl, whisk together eggs and milk. Pour the mixture over the vegetables in the skillet and sprinkle with Cheddar cheese. Lower the heat, cover, and cook until the eggs are set, about 5 to 7 minutes.
  • Serve and savor the flavors!
