Create a refreshing spin on a classic cocktail by combining baby spinach, strawberries, coconut, almonds, and a zesty lime dressing for a vibrant and flavorful salad.
Ingredients:
  • 0.25 cup lime juice
  • 0.25 cup honey
  • 0.25 teaspoon poppy seeds
  • 0.25 teaspoon Dijon mustard
  • 0.25 cup vegetable oil
  • 1 cup sliced almonds
  • 0.25 teaspoon salt
  • 1 (10 ounce) bag baby spinach, rinsed and dried
  • 2 pints sliced fresh strawberries
  • 1 cup toasted flaked coconut
  • 0.5 red onion, sliced
Instructions:
  • In a small bowl, mix lime juice, honey, poppy seeds, and mustard, then slowly whisk in the oil.
  • In a large skillet over medium-low heat, toast almonds with salt and sugar, stirring constantly until light golden brown, about 5 minutes. Let nuts cool outside the skillet.
  • Combine the spinach, strawberries, coconut, onions, and cooled almonds in a large bowl. Drizzle with the dressing and mix well until everything is evenly coated.
