Spinach Pesto Manicotti

Indulge in a comforting, cheesy pasta perfect for relaxed gatherings.
Ingredients:
  • 8 oz uncooked manicotti
  • 1 lb extra-lean (at least 90%) ground beef
  • 1 box (9 oz) frozen spinach, thawed, squeezed to drain and chopped
  • 4 oz mozzarella cheese, diced (about 1 cup)
  • 1/2 cup purchased pesto
  • 1 jar (26 to 28 oz) tomato pasta sauce
Instructions:
  • Preheat oven to 400°F. Grease a 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. Prepare manicotti according to package instructions. Drain and rinse with cold water to cool, then drain well.
  • Combine ground beef, spinach, cheese, pesto, egg, salt, and pepper in a large bowl. For easier stuffing, transfer the mixture to a resealable plastic bag, then cut a 1-inch hole in the corner of the bag.
  • Stuff each manicotti generously with the flavorful beef mixture, then arrange them neatly in a prepared baking dish. Drizzle the pasta sauce over the manicotti and cover with foil.
  • Bake for 30-40 minutes or until the center of the filling no longer shows any pink color.
