Create a delicious chicken salad with creamy avocado and tangy goat cheese vinaigrette.
Ingredients:
  • 0.33333334326744 cup crumbled goat cheese
  • 0.25 cup pine nuts
  • 8 cups chopped spinach
  • 1 cup halved cherry tomatoes
  • 1.5 cups chopped cooked chicken
  • 1 large avocado - peeled, pitted, and sliced
  • 0.5 cup corn kernels
  • 3 tablespoons white wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • In a small skillet over medium-high heat, toast pine nuts until golden brown and aromatic, for about 3 to 5 minutes.
  • Add spinach to a large salad bowl and layer with pine nuts, tomatoes, chicken, avocado, corn kernels, and goat cheese.
  • Whisk white wine vinegar, olive oil, and Dijon mustard in a small bowl until velvety; season with salt and pepper. Pour the dressing over the salad and gently mix to cover evenly.
