Cheese-stuffed tortellini in a creamy tomato and spinach sauce - ready in 45 minutes.
Ingredients:
  • 1 (16 ounce) package cheese tortellini
  • 1 (14.5 ounce) can diced tomatoes with garlic and onion
  • 1 cup chopped fresh spinach
  • 1.5 teaspoons dried basil
  • 1 teaspoon minced garlic
  • 0.75 cup milk
  • 0.75 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 0.25 cup grated Parmesan cheese
Instructions:
  • In a large pot, bring lightly salted water to a rolling boil. Cook tortellini in the boiling water until tender, approximately 10 minutes.
  • Combine juicy tomatoes, fresh spinach, fragrant basil, pungent garlic, a sprinkle of salt, and a dash of pepper in a generous saucepan over medium heat. Stir and cook until the mixture starts to bubble.
  • Combine milk, cream, and flour in a bowl, then pour into a saucepan with Parmesan. Heat through for 3 to 5 minutes. Lower heat and simmer until thickened, around 2 minutes.
  • After draining the tortellini, delicately incorporate them into the saucepan without rinsing, and gently stir to coat them with sauce.
