Elevate brunch with a leftover bun casserole, a simple make-ahead crowd favorite. Pair with a bowl of fresh-cut fruit for the perfect side dish.
Ingredients:
  • 6 Ball Park® Hamburger Buns
  • 2 tablespoons butter, or more if needed
  • 1 cup chopped yellow onion
  • 2 cups sliced mushrooms
  • 3 teaspoons dried Italian herbs
  • 2 teaspoons garlic granules
  • 2 teaspoons sweet paprika
  • salt and pepper to taste
  • 3 cups coarsely chopped fresh spinach
  • 6 slices bacon - cooked, drained, and chopped
  • 1.5 cups shredded Cheddar-Monterey Jack cheese blend
  • 6 eggs, beaten
Instructions:
  • In a buttered, 13- x 9-inch casserole dish, place the bun tops top down and set aside the bun bottoms.
  • In a large skillet, heat butter over medium-high heat until sizzling.
  • Saute onions until just softened, then add mushroom slices and cook over medium heat for 5 minutes, stirring occasionally.
  • Add a flavorful blend of fresh herbs, garlic, paprika, salt, and pepper to the dish. Introduce spinach and cook for an additional 3 minutes until the spinach is just wilted. Then, remove from heat.
  • Spread half of the vegetable mixture gently over the bun tops in the casserole dish. Sprinkle half of the bacon and cheese evenly over the top.
  • Place the cut side up of the bun bottoms in the casserole dish to create the top layer.
  • Spread the remaining vegetable mixture, bacon, and cheese over the top layer of buns.
  • Combine eggs and milk in a bowl until well mixed.
  • Evenly pour the mixture over the casserole, then use a spatula to firmly press down on each bun to submerge them in the liquid. Cover tightly with plastic wrap and refrigerate for 8 hours or overnight.
  • Allow the casserole to come to room temperature for 30 minutes in the morning.
  • Preheat your oven to 350 degrees. Bake until the center is firm and a toothpick comes out clean, about 35-40 minutes. Serve while it's warm and delicious.
