Delicious spinach mushroom quiche with fresh veggies, feta, and Swiss cheese - perfect for a tasty vegetarian brunch!
Ingredients:
  • 0.5 (10 ounce) bag fresh spinach
  • 0.5 yellow onion, sliced
  • 0.5 (4 ounce) container crumbled feta cheese
  • 0.5 (8 ounce) package shredded Swiss cheese, divided
  • 1 prepared 9-inch single pie crust
  • 4 large eggs
  • 0.75 cup milk
  • 1 tablespoon chopped fresh parsley
  • 0.125 teaspoon ground nutmeg
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Mix together the spinach, mushrooms, onion, and feta cheese in a bowl. Spread the mixture into the pie crust and top with half of the Swiss cheese.
  • Mix together eggs, milk, parsley, garlic, salt, black pepper, and nutmeg until well combined. Pour the seasoned egg mixture evenly over the filling, making sure to distribute the flavors throughout. Sprinkle the remaining Swiss cheese on top before placing the quiche on a baking sheet.
  • Bake in the preheated oven for 45 to 50 minutes until lightly puffed and golden brown. Test doneness by inserting a toothpick into the center of the filling; it should come out clean. Let cool for 30 minutes before serving.
