Spinaci alla romana (Spinach with raisins)

Sweet spinach salad with plump raisins.
Ingredients:
  • 2 x 250g pkts English Spinach
  • 40g butter
  • 95g (1/2 cup) raisins
  • 40.00 ml pine nuts
  • 2 garlic cloves, thinly sliced
Instructions:
  • Blanch spinach in a large saucepan of salted boiling water for just 1 minute until tender. Drain the spinach.
  • In a skillet over medium-high heat, warm oil and butter. Sauté raisins, pine nuts, and garlic until pine nuts are golden, about 5 minutes. Stir in spinach and cook until heated through, about 1-2 minutes.
