Indulgent spinach and cheese manicotti with savory meat, topped with creamy white and tangy red sauces. Time-consuming but absolutely delicious!
Ingredients:
  • 2 tablespoons olive oil
  • 6 cloves garlic, finely chopped
  • salt to taste
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 (12 ounce) package manicotti shells
  • 2 cups ricotta cheese
  • 2 eggs, beaten
  • 3 cups spaghetti sauce, divided
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chicken bouillon granules
  • 2 cups half-and-half
  • 0.25 cup chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 0.5 cup grated Parmesan cheese
Instructions:
  • In a large skillet over medium heat, sizzle the onions in oil until translucent. Add garlic and saute for 1 minute, then mix in ground beef. Cook until the beef is nicely browned and crumbled. Season with salt and let it cool.
  • Prepare spinach as instructed on the package. Next, bring a pot of lightly salted water to a boil. Parboil manicotti shells for half the time recommended on the package. Drain and soak in cool water to prevent cracking.
  • Combine the cooked spinach and ricotta cheese with the ground beef mixture. Once cooled, mix in the beaten eggs. Spread 1/4 cup of spaghetti sauce on the bottom of a 9x13 inch baking dish. Gently stuff the drained manicotti shells with the meat and cheese mixture, placing them into the dish. Lightly cover with plastic wrap or a damp towel to prevent cracking.
  • Preheat your oven to 350°F (175°C).
  • In a small saucepan over medium heat, melt butter. Add flour and chicken bouillon, stirring until it starts to bubble. Pour in half and half, bring to a boil, and cook for 1 minute while stirring. Remove from heat, add parsley, then generously pour the sauce over the stuffed shells.
  • Gently fold the basil into the remaining spaghetti sauce. Pour or ladle the spaghetti sauce over the white sauce, aiming to layer the sauces without mixing them.
  • Bake covered for 40 minutes, then uncover and sprinkle with Parmesan cheese. Bake for an additional 10 minutes uncovered.
