Spirited Apple Butter

Vibrant apple spread infused with brown sugar, warm spices, and sweet red wine.
Ingredients:
  • 1 can (12 ounces) frozen (thawed) apple juice concentrate
  • 1/2 cup sweet red wine or apple cider
  • 4 pounds cooking apples, peeled, cored and cut into fourths
  • 3/4 cup packed brown sugar
  • 1 cup apple brandy or apple cider
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
Instructions:
  • In a 4-quart Dutch oven, bring juice concentrate, wine, and apples to a boil. Reduce heat to low and simmer uncovered for about 1 hour, stirring occasionally, until apples are very soft. Use a potato masher to remove any lumps if needed.
  • Combine all remaining ingredients in the pot and bring to a boil. Lower the heat and simmer uncovered for approximately 2 hours, stirring occasionally, until the mixture thickens and no liquid separates from the pulp.
  • Pour the mixture into hot, sterilized jars, making sure to leave 1/4-inch headspace. Wipe the rims clean, seal the jars, and let them cool on a wire rack for 1 hour. Refrigerate and enjoy for up to 2 months.
