Spirited Peachy Pork Tenderloin

30-minute grilled pork with cherry, onion, and whiskey glaze for a delicious dinner.
Ingredients:
  • 1/4 cup coarsely chopped dried cherries
  • 2 tablespoons sliced green onions (2 medium)
  • 1/4 cup whiskey or apple juice
  • 1/2 cup peach or apricot preserves
  • 1 lb pork tenderloin
  • 1/4 teaspoon salt
Instructions:
  • Preheat gas or charcoal grill. Combine cherries, onions, and whiskey in a small microwavable bowl. Microwave on High for 30 seconds or until hot. Allow to sit for 10 minutes, then stir in the preserves.
  • Butterfly the pork tenderloin, season with salt, and coat each side with 1 tablespoon of the preserves mixture.
  • Grill the pork over medium heat for 10 to 12 minutes, turning it once, until it has a slight blush of pink in the center and the meat thermometer reads 160°F. Microwave the remaining preserves mixture on High for 30 to 45 seconds until warm. Slice the pork into 1/4-inch-thick slices and serve it with the warm preserves mixture.
