Elevate cupcakes with a stylish chocolate collar and easy frosting hack.
Ingredients:
  • 55g (1/2 cup) almond meal
  • 40g (1/4 cup) plain flour
  • 30g (1/4 cup) dark cocoa powder
  • 6.00 gm baking powder
  • 70g (1/4 cup) peanut butter
  • 60ml (1/4 cup) maple syrup
  • 2 eggs
  • 60g butter, melted
  • 41.20 gm milk
  • 453g carton Creamy Deluxe Vanilla Frosting
  • 60g dark chocolate, melted
  • Small Easter eggs, to decorate
  • 50g white chocolate, melted
  • 100g dark chocolate, finely chopped
  • 100g dark chocolate melts
Instructions:
  • Preheat the oven to 180C/160C fan forced. Grease the bases of 6 straight-sided, 80ml (1⁄3 cup) silicone muffin pans, line them with baking paper, and place them on a baking tray.
  • In a large bowl, mix almond meal, flour, cocoa, and baking powder. Add peanut butter, syrup, eggs, butter, and milk. Stir until smooth. Spoon mixture into pans and bake for 20-25 minutes until firm. Let it cool for 10 minutes before transferring to a wire rack to cool completely.
  • Mix the frosting and melted chocolate in a bowl until well combined and smooth.
  • Trim the tops of the cakes using a large serrated knife. Slice each cake horizontally into 3 layers. Spread a little frosting on each layer and stack them together. Frost the top with the remaining frosting. Chill the cakes on a tray in the fridge.
  • Prepare the collar by cutting six strips of baking paper measuring 7.5 x 26cm each. Fill a small paper icing bag with melted white chocolate, snip the tip, and pipe dots along each strip of paper. Allow the chocolate to set for 10-15 minutes.
  • Combine dark chocolate and dark chocolate melts in a heatproof bowl. Microwave on Medium, stirring every minute, for 2-3 minutes until melted. Spread a thin layer of dark chocolate over 1 strip to cover. Chill in the fridge for 2-5 minutes until set but not hardened. Gently wrap chocolate-covered strip around a cake. Chill for 10 minutes to set. Repeat with remaining strips and cakes. Peel off the paper and garnish with Easter eggs before serving.
