Healthier mac 'n' cheese with Greek yoghurt, herbs, and lemon zest for a fresh twist on a classic dish.
Ingredients:
  • 500.00 ml Gluten Free Elbow pasta
  • 4 green onions, sliced
  • 2 garlic cloves, crushed
  • 1 large bunch English spinach, trimmed, roughly shredded
  • 375.00 ml Greek Style Yoghurt
  • 40.00 ml plain flour
  • 20.00 ml finely grated lemon rind
  • 62.50 ml roughly chopped fresh dill, plus extra to serve
  • 62.50 ml grated tasty cheese
  • 62.50 ml grated parmesan
Instructions:
  • Preheat your oven to 190C (170C fan-forced).
  • Boil pasta in a large saucepan of water according to package instructions until tender. Drain thoroughly and return to the pan.
  • In a large frying pan over medium-high heat, warm the oil. Sauté the onion until just softened, about 2 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Add the spinach and cook until wilted, about 3 to 4 minutes. Combine with the pasta and toss together.
  • Combine yogurt and flour in a bowl and whisk until fully mixed. Season generously with salt and pepper. Mix in lemon zest and dill. Pour over pasta, stir until coated, and transfer to a 6-cup ovenproof dish. Top with a blend of tasty and parmesan cheese. Bake for 20-25 minutes until cheese is golden and melted. Garnish with more dill and serve promptly.
