Quick and easy vegetable pilaf ready in under 20 minutes.
Ingredients:
  • 40g almond
  • 36.40 gm olive oil
  • 1 leek (white part only), sliced
  • Zest and juice of 1/2 lemon
  • 2 garlic cloves, crushed
  • 1 zucchini, finely chopped
  • 150g green beans, cut into 1cm pieces
  • 150g pea
  • 400g rice
  • 125.00 ml chopped mixed fresh herbs (such as mint, parsley and chives)
  • 80.00 ml low-fat Greek-style yoghurt (optional), to serve
Instructions:
  • In a large frypan over medium-low heat, gently sauté leek, lemon zest, garlic, zucchini, beans, and peas in olive oil. Season with sea salt and black pepper, stirring occasionally, until vegetables are almost tender, for about 10 minutes.
  • Combine the chilled rice and stir for 2-3 minutes until warm. Mix in the herbs and lemon juice.
  • Divide the flavorful pilaf into bowls, sprinkle with crunchy flaked almonds, and top with a dollop of tangy yogurt, if preferred.
