Spring Vegetable Fettuccine

Quick and easy creamy veggie fettuccine with only 5 ingredients, ready in just 20 minutes.
Ingredients:
  • 1 package (9 oz) refrigerated fettuccine
  • 1 cup half-and-half
  • 1 container (5 oz) garlic-and-herb spreadable cheese
  • 1/2 teaspoon garlic salt
  • 1 bag (1 lb) frozen baby peas, carrots, pea pods and corn (or other combination), thawed and drained
  • Freshly ground pepper, if desired
Instructions:
  • Prepare the fettuccine according to package instructions, then drain and set aside.
  • In a large nonstick skillet, heat the half-and-half until boiling over medium heat. Add the cheese and garlic salt, and stir constantly until the cheese is melted and the mixture is smooth.
  • Sauté vegetables for 7 minutes until tender. Serve over fettuccine and sprinkle with pepper.
