Cheesy Cheddar and egg baked summer squash casserole that's irresistibly delicious.
Ingredients:
  • 2 tablespoons vegetable oil
  • 3 summer squash, sliced
  • 1 small onion, diced
  • 4 large eggs, beaten
  • 3 cups shredded Cheddar cheese
  • 2 tablespoons milk
  • 2 tablespoons white sugar
  • 2 tablespoons all-purpose flour
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 6 tablespoons butter, melted
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • In a large skillet over medium heat, sauté squash and onion in sizzling oil, stirring occasionally, until tender, around 10 minutes.
  • Combine eggs, 1 cup Cheddar cheese, milk, sugar, flour, salt, and pepper in a large bowl. Add the squash mixture and melted butter, then transfer everything to a 2-quart casserole dish. Sprinkle the remaining 2 cups of Cheddar cheese on top.
  • Bake in the preheated oven for 35 to 45 minutes until the casserole is set and the cheese is crispy and lightly browned. Rest for 15 minutes before serving.
